Goody Girl Championship Potatoes

Got this from GuyFieri, and was delish with the exception of my crab boil bag bursting so we had to deal with the little spice balls... Anyway, I put a pound and a half of bacon in/on it, and made it the entire meal. Now, if we'd had an oven so we could have bread the meal would have been complete ~

Ingredients
1 package crab boil
3 pounds red potatoes
1 pound bacon, diced
1 cup diced red onion
1 Tablespoon minced garlic
1/4 pound butter, at room temperature
2 cups finely shredded Cheddar
1 green onion, chopped
1/2 teaspoon cayenne pepper
1/2 teaspoon paprika
Salt & Pepper
16 ounces sour cream

Directions
Fill a 6-quart pot 2/3 full of water, add crab boil. Cut the potatoes into 3/8 inch, or bite-size pieces. Add the potatoes to the pot. Bring water to a boil and cook th epotatoes until fork-tender.

While the potatoes are cooking: in a medium saute pan, cook bacon pieces until crispy; remove and drain (I strain in a spagetti strainer). Retain some bacon drippings in the pan and add the red onion; cook until caramelized. Just before onions are done, add garlic and cook until lightly brown.

In a bowl, place butter, 1/2 the cheese, 1/2 the bacon bits, 1/2 the green onion, the cooked red onions and garlic, cayenne, paprika, sale, pepper and sour cream; mix togther thoroughly.

Strain potatoes and add to bowl; let stand for a few minutes or until cheese starts to melt. Fold ingredients together, trying not to break up the potatoes excessively. Top with remaining cheese, bacon and green onions. I lidded the completed dish to allow the top cheese to soften/melt a little, too. Delish!
