Crockpot Chicken & Rice

Yeah, I know it's been a while, and I promise to do better. I've got lots of picture to upload, but am having trouble keeping up with it all ~ Just a quickie, though. Found this recipe online for something to cook at the coast that would be ready when we came in for the day, and it was a resounding hit, so I thought I'd share ~ Hope you all try and enjoy!

Crockpot Chicken & Rice

6 boneless skinless chicken breasts
1 cup uncooked white rice
3 Tblsp dried chopped onion flakes (or can use a pack of Lipton Onion Soup mix, W just doesn't like)
2 cans cream of mushroom soup
1/4 cup grated parmesean cheese
butter
salt/pepper

Grease crock pot good. Mix rice, onion (or soup mix) and soup in a bowl. Lay 3 breasts in the bottom of the crock pot, season with salt and pepper and put a pat of butter on each. Cover with half the rice mixture, then repeat with the other 3 breasts, seasoning the same, then the remainder of the rice mixture. Top with grated parmesean cheese and cook on low for 8 - 10 hours or high for 4 - 5.

I cooked on low for 9 hours, and the chicken just fell apart, but wasn't dry at all. Was delish!
