Recipes

Boy, you'd think I was Paula Deen with all the recipe requests I've had lately... Naw, just been lucky with a few meals. And both of these I do by eye, so adjustments may be neccessary for your families. Anyway, for Tara ~ nearly every wife in lodge has a "thing". Pat Kennedy is the deviled egg lady. Emily Pearce is the desert queen., etc. Well, I'm the cobbler lady.

Apple Cobbler

2 cans sliced apples (large cans from Fred's) (You can also use fresh apples, peeled & cut up. Just cover bottom of dish)
ground cinnamon
1 1/2 cups flour
1 1/2 cups sugar
1 1/2 sticks butter, melted
1 tsp vanilla extract
Heat oven to 350. Drain apples & place in 9 x 11 dish & sprinkle with cinnamon and sugar to taste. Mix flour, sugar, butter and vanilla (makes a crumbly mixture). Pull into balls in your hands, patting out fairly thin and lay atop the apples, covering, then bake to golden brown.

Cheesy Potato Soup

6 or 8 regular sized potatoes, peeled & chunked
small onion, diced small
1/2 stick butter
1/4 cup flour
small box mexican velveeta (or regular), cubed
1/2 cup milk
salt, pepper and parsley flakes to taste
1 lb bacon, cooked and crumbled

While potatoes are boiling in enough salty water to cover, in a separate pan, melt butter and saute' onion until clear. Add flour and mix until blended. Add milk and velveeta, stirring constantly until blended and thick. When potatoes are done, add cheese mixture, salt, pepper and parsley. Mix well, top with bacon crumbles  & eat.

  1. Jane, Thanks for sharing your recipe...sound delicious. I love me some apple cobbler and the cheese soup sounds like something we would all like. I am definately the dessert person when we have something at school. I brought a casserole one time and I took some heavy flack about it!
